The end of December there was a 2 week break at Fresh Options where we weren't getting vedgies for the week. We ran out of carrots so we picked up a bag and then the didn't stop coming after the Fresh boxes resumed... I don't really care cause it causes me to be creative with vedgies so this is a soup I threw together
Curry Carrot Overload Soup.The Hardware
Blender
Cup Measure
Chef Knife
Large Size pot, Or a wok,,, I make just about everything in a wok
Small Sauce Pan
Box Grater
The Software14 med sized Carrots
1L of Vedge Stock
3Tbsp of Curry Powder
1Tbsp of Powder Ginger
2C of Milk or Soy Milk substitute.
2Tbsp of Margarine
The Application.Chop all but 2 carrots into smallish bits and then boil in the vedge stock till soft, pour the the carrots and all into a blender and Puree till smooth, do it in batches if you don't have a bitchen blender like me. Return the mixture to the pot and continue to heat. Grate the 2 left over carrots on a Box grater and add to the pot.
In the small sauce pan add the margarine and let it melt on low heat. When it is liquid add the curry and ginger powder and cook for 2 min, once done add to the carrot mixture.
Now just add the Milk beverage of your choice, bring to heat and serve.
