Roast Beef w/ Orange Tatoes,



I love a good roast... We have been having a heat wave here and the AC never started up this year so I am waiting for the repair man,,, what does this mean for food... 3AM roast beef dinner, cause it is has cooled down enough to put the oven on.. I never knew how to do a roast I had to look it up and research it... I was afraid of spending $13 on a piece of meat and then recking it.. Jamie Oliver was the best at helping. So... her it is...

The Roast

The Hardware
Sharp Pearing knife
Roaster

The Software
1Roast, Any cut will do I Buy what is on sale
3 Cloves of garlic
Fresh ground pepper

The Application
Take raw meat and peirce with a pearing knife all the way to the hilt and then once the blade is in move back and forth to make a hole about 1 inch, repeat 2 more times, Then peal and trim 3 cloves of galic and place into said holes.. this will flavor the whole roast and give you nice garlicy surprises when eating,,, (this is trick right out of the Jamie Oliver Cookbook) then place in a roaster and fill 1/4 the way up the side of the roast with water, you can use beer too but I would rather drink the beer, Liberaly coat the top with pepper.
It is important to set the oven at 300 degrees and either Bast or Flip the roast on the hour,,, or else the top will dry out.. I roast mine for 6 hours.. this makes it so tender it will flake when taken out.

Rustic Orange Tatoes

The Hardware
Knife
Vedge Pealer
Large Bowl
Mixer

The Software
4 large Carrots
5 Potatoes
1/2 C milk
stick of butter( I use Margerine)

The Application
Peal and cube the carrots and potatoes and toss into the roaster with the beef, at the end of the cooking take out the vedge and place in a bowl add milk and Margerine and hit them with the mixer low speed at first and then push it up to high for creammy goodness... This is a good way to get some orange vedge into your kids diet .. thats what my inlaws did to get my Gurl to eat her vedge and she enjoy 'Orange tatoes' to this day..
